Who Are the People Behind El Globo Restaurant?


El Globo Restaurant was founded on November 18, 2004, by Evangelina Abundis and Oswaldo Córdova — a husband and wife with a simple but powerful dream: to share the authentic flavors of Jalisco with the Grand Rapids community.

What started as a small, modest shop serving coffee, ice treats, and traditional Mexican snacks has grown into something much greater. From the very beginning, El Globo was built on passion, hard work, and a deep respect for Mexican culinary traditions. Over 20 years later, the Córdova family is still behind the counter every day — their children now actively involved in daily operations, carrying forward the values of dedication, service, and pride that define this restaurant.

El Globo grew from a single coffee and snack shop in 2004 into two full-service restaurants, a food truck, and a catering division — all built on authentic Jalisco recipes and a commitment to treating every guest like family.

The journey wasn’t overnight. It took years of early mornings, long days, and an unwavering commitment to quality. Evangelina and Oswaldo never cut corners — every dish they served reflected the same care and tradition they brought from Jalisco. That reputation grew organically, built one plate and one customer at a time. Grand Rapids noticed. The community responded. And El Globo grew.

2004

El Globo Founded

Evangelina Abundis and Oswaldo Córdova open a small shop serving coffee, ice treats, and traditional Mexican snacks in Grand Rapids on November 18, 2004.

2016

S Division Restaurant Opens

El Globo expands to a full-service restaurant at 2019 Division Ave S, marking a major milestone and bringing authentic Jalisco cuisine to South Grand Rapids.

2021

Catering & Banquet Launch

El Globo introduces full-service catering and banquet services, bringing authentic Jalisco-inspired cuisine to weddings, corporate events, and private celebrations.

 

2023

Food Truck Launches

El Globo launches its food truck, serving festivals, companies, and community gatherings throughout Grand Rapids and West Michigan.

2025

E Beltline Location Opens

On January 27, 2025, El Globo proudly opens its second restaurant at 2844 E Beltline Ave NE — expanding the family legacy to Northeast Grand Rapids.
